I don't follow these distinctions but if they're sliced by a big sweaty guy behind the counter, it's probably quality fish.
Ha! I worked in a deli in high school that had both belly and Nova lox. And I never learned the difference until today. Be less stupid, indeed!
I'm more confused that sable is both a fish and a weasel.
