'Bon Appetit' Eats The Future

The new issue of Bon Appetit declares Grant Achatz's Chicago restaurant Next, a high-concept, ticketed joint that will "serve four menus per year from great moments in culinary history — or the future," one of the best restaurants in the country for a celebration. Perhaps the magazine took the restaurant's idea of eating in "the future" seriously, since the place has yet to open, and likely won't until early 2011. [Via]

Well he has the best restaurant in North America according to a lot of people, so I'm inclined to believe the hype.

In the future, we will eat only the finest robot steaks, and drink solar energy.

I felt like I was eating in the future when I ate at Alinea. It was fun although I couldn't afford to eat like that more than a few times in my lifetime (on my dime), plus sometimes you don't want to think TOO much about your food, sometimes you don't feel like dealing with an explanation. But he's great at what he does.

I hate Andrew Knowlton (restaurant editor of Bon Apetit) and anything that makes it look like he made a mistake or something is fine with me. Seriously, have you seen that guy on Iron Chef America? He is horrible.
