the greatest change is not in the inflated cost of food, but rather in the changes in the cost of labor -- chefs, servers, etc. Even in the last 2 or 3 years there have been significant changes in the way restaurants have to pay their staffs benefits, overtime, etc. and how all of those costs are accrued. Yes, food costs have risen in the past 10 years... but labor costs can account for the vast majority of that 56% increase you note.
